Based in Kampala, Uganda, is the largest producer of purified papain in Africa. Papain is a proteolytic enzyme used in a number of food, cosmetic and industrial applications. The enzyme is sourced from the Carica Papaya fruit. In order to obtain the enzyme, smallholders make an incision in the leaf or fruit of the unripened plant. The plant's latex is then collected, processed and dried into white powder or flake form.
